Sweet Potato nostalgia

It is amazing what love can develop when the options are limited. I’ve learned a lot about the power of proximity in the formation of most strong relationships. When I was living in Calgary, I fell in love with every product that said “vegan” simply because they were so rare. Grocery shopping there was nothing like my experiences in Toronto. Here you can stand for an hour trying to decide which brand of soymilk to purchase – there, if I found one on the shelf I would become devoted to its deliciousness (cognitive dissonance my friends). I remember the day I saw the word “vegan” on cookies prepared by a local baker. They were called “”sweet potato pow cookies. I loved them immediately – my partner thought they were weird. I didn’t care if they were weird – they were vegan!

I have never forgotten these cookies. When Kim and Ricki announced that sweet potato would be the selected ingredient for this month’s SOS kitchen challengeI decided the time was right to try to recreate this interesting treat. My version doesn’t contain any flour or refined sugar, so it is quite a twist on the original.

I was really happy with the result. I don’t know if you’ll think they’re delicious (you might think they’re weird) but they really do taste a lot like the ones I devoured while writing my Masters thesis in a tiny apartment in Calgary.

If you prefer baked cookies you can certainly add to the base recipe I created a little whole wheat pastry flour, agave, baking soda and baking powder.

If you’re up for the pow of these sweet potato power cookies then forget the flour and let the moist texture of the sweet potatoes be the star.
Sweet Potato Power Cookies
1 cup mashed, baked sweet potato
3 medjool dates, pitted
1/2 tsp vanilla extract
1 tsp molasses
1/2 tsp cinnamon
1/2 tsp ground ginger
1/8 tsp clove
pinch of sea salt
1/2 cup pecans
1 TBSP dark chocolate (I used raw chocolate)
In your food processor combine the sweet potato, dates, vanilla, molasses and dry spices. Pulse until well combined and a smooth texture is achieved. Add in the pecans and pulse to break them up into small pieces. Add the dark chocolate and pulse a few times – to leave chunks in the batter. Transfer to the fridge and allow to chill for an hour. Scoop/roll the batter into small balls (about one inch). You can dehydrate the balls at 115 degrees for 6 hours to create a firm cookie – or enjoy them straight from the fridge. If you are not going to dehydrate the cookies I suggest adding 1 TBSP of ground flax to the batter.

    Oh, YUM! This is nostalgia for me too, as I used to buy those cookies here at Ambrosia before the ACD! Loved them, loved them. Your version looks great–and so much healthier!     These sound so yummy! I just bought sweet potatoes today (was so excited to find some!). I've bookmarked these babies.
    My big exciting recreating was simply making Lara Bars at home. I'd had some when visiting the states on vacation & wanted to make some. Was so happy by how easy it was!
