Time to clean out the freezer to make room for ICE CREAM OVERLOAD!

In less than a week I will have a freezer full of incredibly delicious frozen delights!

The entries have started to roll in for the raw ice cream sandwich challenge. So far, I’m completely blown away by the brilliance, creativity and perseverance you have all shown. I’ve already wasted plenty of hours trying to imagine each of the incredible flavour combinations already submitted. But, there is still time for you to submit your stellar summer sweets (offering me lots of material for days of decadent daydreams). The deadline is this Friday at midnight.

Just in case you need a little push to publish your perfect ice cream creation, I should remind you that there are prizes!

Navitas Naturals has donated an amazing package (one make-your-own chocolate superfoods kit, a 4 oz bag of Sweet Cacao Nibs, one cacao lip balm and a 8 oz bag of raw, organic cacao powder) for the first place winner.


Heathy Pace of Sweetly Raw has generously offered a copy of her brand new raw ice cream eBook for our second place winner. If you’re not already familiar with this culinary superstar then your life is about to get a whole lot sweeter. Heathy’s raw dessert eBooks are often my first source for reliable recipes, unique flavour combinations and beautiful presentation ideas that I know will impress my most food-focused friends.

Her newest book had barely downloaded before I was pulling out my food processor to create these Oatmeal Cookie and Apple Cinnamon Ice Cream Sandwiches.
If I didn’t love kale so much I would be willing to live out the rest of my days on a divine diet entirely comprised of these creamy, sweet sandwiches. Honestly, they are that good.
I wish I could say I would share these treats with the third place winner in the challenge, but I ate them all. So instead, Nicole and I will put together a great goodie bag to send their way.
I know many of you have been working very hard, testing recipes to enter in the challenge, I can completely relate. This weekend, after spending 8 hours racing around Toronto with the Kale Kommandos (we didn’t win but we did have a blast trying!) I created these lovely Berry Napoleon’s for OneGreenPlanet.

They would be a perfect addition to a patriotic party for Canada Day or Independence Day – or simply, a celebration of berries anywhere in the world.

This week, in anticipation of an amazing onslaught of incredible ice cream sandwich recipes I highly suggest you take stock of your freezer space and make some difficult decisions about what to purge. We’re talking about some pretty valuable real estate – choose carefully. xo
